SENSORY PROFILE
Pale lemon in colour, the wine pours with a substantial mousse and retains persistent bubbles in the glass. It has aromas of MacIntosh and Granny Smith apples, lemon, and toasted bread. The palate is refreshing and creamy, with red apple skin, pear, brioche, and nutty notes. The finish is clean and long.
FOOD PAIRINGS
Perfectly suited as an aperitif, this wine will also accompany a variety of charcuterie meats and cheeses and pastry based appetizers. It would also be a great accompaniment to dishes with creamy sauces, although its delicate aromas are easily overpowered by foods with stronger seasonings.
CELLARING POTENTIAL
This wine is ready to drink on release and will be showing best from 2025-2029.
VINTAGE
The 2021 vintage started with relatively good vine and bud health from a small crop and mild winter. Summer temperatures were among the hottest on record and conditions were optimal for flowering and fruit set.
In August, what appeared to be an early and ripe vintage stalled due to drought. This was followed by record rains in September and October resulting in a rapid increase in cluster weight and dilution of berry contents.
Where harvest was able to be delayed until adequate ripening, most varieties are showing good fruit character early with delicate aromatic white varieties and fruit driven red varieties.

Vintage Composition: 79% 2021, 21% reserve wine aged in barrel.
VINIFICATION
Pinot Noir and Chardonnay from the 2021 vintage were harvested and vinified separately. The Pinot Noir was fermented in stainless steel tank and neutral barrels, while the Chardonnay component was all barrel fermented.
The base wines were aged on primary lees for 6 months before blending, where 21% reserve wine from 2020 aged in barrel was included. The wine was bottled in March 2022 and secondary fermentation was completed within one month. The wine then aged on lees in bottle for 28 months before disgorging in July 2024.
The wine was finished with 5 g/L dosage using organic beet sugar.

This version is 79% from 2021 and the rest from 2020. The nose starts with a toasty/brioche note followed by lemon, flinty accents, pears and green apples with a persistent, elegant bead in the glass. “This blend of 58% pinot noir and 42% chardonnay was aged 28 months on its lees. It s bright, pale lemon. The nose is soft and clean with well integrated apple, vanillin (partially aged in barrel), light toast and breadcrumb.
