2022 Sauvignon blanc brut

This Sauvignon Blanc traditional method sparkling wine was created to capture delicious Niagara Sauvignon Blanc in a bubbly expression. Hand-picked grapes from the Hanck Vineyard were whole cluster pressed, and following primary fermentation the base wine was blended with a portion from the Lizak vineyard for aromatic complexity.

Tirage took place the following spring, after which the wine aged on lees for 12 months before disgorging. The half-bottle format and crown cap finish leave no excuse not to open a sparkling wine any time; no need to wait for an occasion.

SENSORY PROFILE

Guava, grapefruit pith, lime, and minerality define this distinct Sauvignon Blanc sparkling wine. Fine bubbles and a bone-dry acid driven palate lead to a crisp and slightly smoky finish.

FOOD PAIRINGS

This wine goes perfectly with a variety of green salads, ceviche, fish tacos, and savoury cold soups. Tomato, lime and cilantro are perfect compliments, so pair this with pico de gallo or guacamole for great fresh flavours!

CELLARING POTENTIAL

Ready to drink now but the bubbles and crown cap closure will allow this wine to retain freshness for multiple years.

VINTAGE

The 2022 vintage was largely shaped by a very wet end to 2021 followed by a sharp cold January that caused bud death across most vineyards and varieties. Some areas such as very close to Lake Ontario or on slopes with very good water and air drainage fared better, but overall, this winter led to a significantly reduced crop.

A slow start in spring was followed by a warm and mostly dry summer. August brought some storms, but the fall was again dry and relatively warm leading to good ripening conditions for the small crop that was hanging.

Quality is good to excellent due to the lower yields and favourable weather and the wines from 2022 will be sought after due to their relative scarcity.

VINIFICATION

Sauvignon Blanc was hand harvested from the Hanck Vineyard on October 8 and whole cluster pressed. The juice was settled at cold temperature and racked for fermentation in a stainless steel tank. The wine was fermented with a combination of selected yeast at cool temperatures.

A portion of Sauvignon Blanc from the Lizak Vineyard was blended after fermentation to complement the aromatics. The base wine was aged on fine lees for 3 months before racking and coarse filtration to prepare for tirage.

The wine was bottled on February 9, 2023, and secondary fermentation was completed in 6 weeks. The wine then aged on lees in bottle for 12 months before disgorging in March 2024. The wine was finished with a 4 g/L dosage using organic beet sugar.
